Alès, a working town with a population of about 40,000, is set in the foothills of the Cevennes Mountains. As such its sizable indoor market, Les Halles de L’Abbaye, has an abundant selection of proteins – including fish, meat and charcuterie, poultry, and rabbit; as well as fruit and vegetables, and regional products such as cheese and olives.
On Saturdays one of my favorite bread purveyors can be found outside the northwest doors. Among other things he makes a great whole wheat (pain complet) and flakey fougasse in a variety of flavors including olive and anchovy. While all his bread is organic and made from a sourdough starter (au levain), pain decompagne has the strongest sourdough flavor.
